Turmeric Pasta with Broccolini

Boil the noodles using reserved broccolini blanching water. Fire up the heat of the broccolini sauté pan to a medium-high flame just before the noodles are done. Cook noodles to a firm “al dente.” Add a dash of the starchy pasta water to the sauté pan, no more than 1-2 oz. Use tongs to transfer the noodles directly from the pot to the simmering broccolini sauté pan. Cut the heat, toss and stir. Serve the noodles.

Boil the noodles “al dente” and add to the mixing bowl directly from the boiling water with tongs. Add a dash of the starchy pasta water to the mixing bowl. Not too much. Maximum 2 oz. The heat of the wet noodles and the added pasta water will help to combine the sesame paste and to harmonize the flavors and textures of the other ingredients. Stir gently until ingredients and turmeric sesame sauce is evenly coating the noodles.
Serve with the Turmeric Chili Tea Seed Oil Condiment and/or hot oil pickled giardiniera vegetables.

In a medium sauce pot, add the bundle of thin turmeric noodles and the thinly sliced scallion. Pour the Kombu Shiitake Dashi over the noodles and bring to a boil. Add the sautéed mushrooms and pan liquid to the noodle pot. Simmer together for 2 minutes. The thin noodles cook swiftly in the soup, so don’t over boil them. Once cooked, divide the noodles and the soup into two bowls with tongs and a ladle.

Soup recipe can yield several bowls of ramen or miso soup servings with rice. Use one bundle of ramen noodles for every two bowls to be served. Cook noodles fresh to order and serve right into the soup bowl and add a ladle or two of hot soup for best results.

In a small sauté pan, bring the Oolong Tea Seed Oil and sesame oil to moderate simmer, being careful not to burn. Add all the ingredients to the hot oil blend and reduce the heat to a slight simmer. Simmer for 30 seconds while shaking and stirring. Cut the heat and stir until temperature reduces. Let stand for a minute or so in the pan and decant into a small bowl.
